Here's an incredibly easy and simple recipe, perfect for family weeknight dinners or meal prep lunches! Just grab some lentils and your favorite barbecue sauce for a flavor-packed plate of deliciousness!
BBQ Lentils with Spinach and Radishes

Total Time: 40 min
Yield: 4 servings
INGREDIENTS:
1 cup lentils, rinsed
3 ½ cups water
1 cup BBQ sauce
4 cups spinach
1 tbsp avocado oil
¼ tsp sea salt
2 cups radishes
INSTRUCTIONS:
In a small saucepan, bring water to a boil. Add in the lentils, bring it up to a boil, turn heat down to medium-low, and cover to simmer for 25-30 minutes until tender.
While the lentils are cooking, heat the oil in a large pan. Add in the spinach and turn heat down to medium-low. Wilt the spinach and add in the salt right before finishing.
Slice the radishes into thin coins.
Once lentils are done cooking, drain and add into a large bowl. Mix in the BBQ sauce until well combined. Adjust to taste.
Evenly divide the lentils, spinach, and radish coins into four servings. Enjoy!
