Chilean sea bass is a delicacy at its finest, and when it's cooked perfectly, the flavorful fish just melts in your mouth! Stir it up with some fine shiitake mushrooms and herbaceous Thai basil for a beautifully flavor-balanced dish!
Chilean Sea Bass with Thai Basil and Shiitake Mushrooms

Yield: 2 servings
INGREDIENTS:
2 fillets Chilean sea bass
1 cup shiitake mushrooms, sliced
1 cup Thai basil
2 cloves garlic, minced
1 tbsp soy sauce
½ tbsp rice vinegar
½ tbsp avocado oil
sea salt to taste
INSTRUCTIONS:
Heat avocado oil in a large non-stick skillet on high. Once hot, add in the garlic, soy sauce, and rice vinegar. Give it a quick stir and immediately add in the mushrooms. Stir again and cook for 2 minutes.
Lower to medium heat and add in the Chilean sea bass fillets skin side down. Cover to cook for 5 minutes.
Uncover, raise heat to high, and sear the sides of the fillet for 1-2 minutes each.
Add in most of the Thai basil, reserving some for garnish. Cover to let the flavors develop (3 minutes).
Remove pan from heat, hit the sea bass with sea salt, and garnish with reserved Thai basil. Enjoy!
