Tenderly cooked wheat berries and crisp spinach dressed with beautifully fresh notes of tangy citrus and sweet honey. This colorful plate is layers of texture and flavor built one on top of another. Best made during the winter which is the peak season of the citruses and spinach, however, this refreshing dish is definitely enjoyable at any time of the year.
Citrus Wheat Berry Salad

Yield: 3 - 4 servings
INGREDIENTS:
For the salad
1 cup wheat berries, cooked
2 cups spinach
1 cara cara orange
1 navel orange
2 clementines
For the dressing
juice of 1 navel orange
2 tbsp apple cider vinegar
2 tbsp honey
sea salt and black pepper to taste
INSTRUCTIONS:
In a large mixing bowl, whisk together the ingredients for the dressing. Add in wheat berries and mix until well combined. Set aside to marinate for 10 minutes and toss right before serving.
Slice the oranges and separate the clementine segments. On a large plate, layer on spinach, oranges, and marinated wheat berries. Drizzle on the extra dressing and enjoy!
NOTES:
To cook 1 cup of wheat berries, bring 3 cups of water to a boil in a small saucepan. Reduce to a simmer and cook wheat berries for 60-90 minutes or until tender.
