Grilled Pineapple Shrimp Skewers

Yield: 24 servings
INGREDIENTS:
half a pineapple, cut into 24 1" cubes
24 large shrimp with tail on
¼ tsp sea salt
¼ tsp black pepper
2 tbsp avocado oil
INSTRUCTIONS:
Fire up the grill and brush with avocado oil or heat oil in a large cast iron grill pan.
Season the shrimp with salt and pepper.
Place shrimp on the grill and cook, turning occasionally until sides char.
Place pineapple cubes on the grill at a 45° angle and cook each side for 2-3 minutes until grill marks show.
String 1 shrimp with tail facing up on to the skewers and then a pineapple cube. Serve with your favorite barbecue sauce to dip in. Enjoy!
