Minty Sugar Snap Peas

Mint leaves and snap peas, the combo you never knew you needed! Vibrant and fresh, this dish packs a flavorful punch. It's quick to make and takes even less time to devour it all.

 
Minty Sugar Snap Peas

Prep Time: 5 min

Cook Time: 10 min

Total Time: 15 min

Yield: 4 servings


INGREDIENTS:

  • 3 cups sugar snap peas

  • 1 cup mint leaves, roughly chopped

  • 1 tbsp sugar

  • ¼ tsp + ¼ tsp sea salt

  • ¼ cup avocado oil

  • water for boiling

  • mint leaves for garnishing


INSTRUCTIONS:

  1. In a medium saucepan, cover sugar snap peas with water, and bring to a boil.

  2. Stir in sugar and ¼ tsp sea salt and lower heat to simmer for 5 minutes.

  3. Drain and while still hot, toss sugar snap peas with ¼ tsp sea salt and oil. Allow to cool, garnish with fresh mint leaves, and enjoy!
