Minty Sugar Snap Peas

INGREDIENTS:
3 cups sugar snap peas
1 cup mint leaves, roughly chopped
1 tbsp sugar
¼ tsp + ¼ tsp sea salt
¼ cup avocado oil
water for boiling
mint leaves for garnishing
INSTRUCTIONS:
In a medium saucepan, cover sugar snap peas with water, and bring to a boil.
Stir in sugar and ¼ tsp sea salt and lower heat to simmer for 5 minutes.
Drain and while still hot, toss sugar snap peas with ¼ tsp sea salt and oil. Allow to cool, garnish with fresh mint leaves, and enjoy!
