Radish and Cucumber Summer Salad

INGREDIENTS:
1 cup radishes, thinly sliced
½ English cucumber, sliced at an angle
¼ cup heirloom beans
¼ cup mint leaves
1 tbsp hemp seeds
1 tbsp extra virgin olive oil
sea salt and black pepper to taste
microgreens for garnish (optional)
INSTRUCTIONS:
On a large plate, start to assemble the salad. Layer on radishes and cucumbers.
Add heirloom beans and sprinkle on mint leaves and hemp seeds.
Drizzle on olive oil and crack sea salt and black pepper on.
Garnish with microgreens and enjoy!
