Strawberry Cabbage Slaw

Refreshing, sweet, and nutritious. This summer slaw is the crispness you're looking for while the sun is beating down. It's great on its own, but it sure pairs well with any hearty meat, for say a delicious barbecue! Try this recipe at your next summer get-together and impress your guests with this unique slaw.

 
Strawberry Cabbage Slaw

Prep Time: 15 min

Total Time: 15 min

Yield: 6-8 servings


INGREDIENTS:

For the slaw

  • ½ head cabbage, shaved

  • ½ head purple cabbage, shaved

  • 2 cups strawberries, stems removed and sliced

  • 1 cup almonds

  • ¼ cup hemp seeds

For the dressing

  • 1 cup strawberries, stems removed

  • 3 tbsp apple cider vinegar

  • 1 tbsp maple syrup

  • 2 tbsp olive oil

  • ¼ tsp sea salt


INSTRUCTIONS:

  1. In a large serving tray, lay shaved cabbages and top with strawberries, almonds, and hemp seeds.

  2. Blend together the ingredients for the dressing.

  3. Drizzle dressing over slaw or serve on the side. Enjoy!
