Thai Style Quinoa Slaw

INGREDIENTS:
1 cup shaved cabbage
½ cup shaved carrots
¼ cup cilantro
¼ cup coconut flakes
¼ cup roasted peanuts
¼ cup toasted sesame seeds
½ cup plain greek yogurt
2 tbsp peanut butter
½ tbsp rice vinegar
1 tbsp brown sugar or monk fruit
¼ tsp chili flakes
½ tsp garlic powder
¼ tsp ginger powder
½ tsp sea salt
INSTRUCTIONS:
Follow the directions on the package to cook the quinoa cup.
In a large mixing bowl, add in cabbage and carrots. Toss to combine.
Add in cilantro, coconut flakes, peanuts, sesame seeds. Reserving a little bit of each for garnishing.
In a small bowl, whisk together yogurt, peanut butter, rice vinegar, sugar, chili flakes, garlic powder, ginger powder, and sea salt.
Add sauce into the quinoa and stir to combine.
Add quinoa mixture into the vegetables and toss until well combined.
Plate and garnish with cilantro, coconut flakes, peanuts, and sesame seeds. Enjoy!
