White Wine Poached Mahi Mahi with Fennel and Capers

Time to elevate your weeknight dinner game! Poached in white wine with fennel, these tender mahi mahi fillets are perfectly aromatic and flavorful!

 
White Wine Poached Mahi Mahi with Fennel and Capers

Total Time: 45 min

Yield: 6 servings


INGREDIENTS:

  • 6 mahi mahi fillets, lightly salted

  • 1 large fennel bulb, thinly sliced

  • 1 onion, chopped

  • 5 campari tomatoes, roughly chopped

  • ½ cup white wine

  • ¼ cup tomato sauce

  • ½ cup parsley, chopped

  • 1 tsp sea salt

  • ½ tsp black pepper

  • 6 tsp capers

  • parsley for garnish


INSTRUCTIONS:

  1. On high heat, add in fennel and onion and cook until onions caramelize, stirring occasionally.

  2. Lower heat to medium and stir in tomatoes, tomato sauce, parsley, salt, and pepper. Add the white wine and nestle the mahi mahi fillets in the mixture. Cover and cook until mahi mahi fillets are just done (12-15 minutes) then uncover to cook for another 5 minutes.

  3. To serve, plate a base of the fennel mixture, add mahi mahi, drizzle more sauce, and garnish with 1 tsp capers and fresh parsley. Enjoy immediately while hot.
